Sliced bread with club wheat

Some days ago our bread machine broke, so now that I have to do the bread myself (with the help of the thermomix) I’ve decided to do some more tests on bread recipes.

I have never made sliced bread, so this has been my first choice.

To make this particular kind of bread you need a mold with a cover. I use to use silicone molds but this time I cannot use them…. hopefully searching around the house I’ve found an iron mold and as I cover I have used a glass tray.

I have covered the mold with baking film, but not the cover, so you can imagine the result: the bread was attached to the glass tray…arg!!

Recipe of sliced bread with club wheat

  • 20g of olive oil
  • 500g of club wheat
  • 55g of oat milk
  • 1 teaspoon of dried yeast
  • 200g of water
  • 1 teaspoon of salt

I have placed all the ingredients inside the thermomix and then I have programmed the knead mode for 10 minutes. Then I have let the dough rest for an hour inside the machine, and after I have formed a baguette and placed it inside the mold. I have let the dough rest for 2 more hours, first without the cover and once the dough is about to get higher than the mold, covered.

Then I have baked the bread for about 30 minutes at 220ºC. I you like the bread with a golden cover, then you can take off the cover of the mold 5 minutes before taking the bread out of the oven.
