I had this post on the drafts folder for a couple of month…. one day I had boiled zucchini and amaranth on the fridge and I decided to improvise this recipe…
Recipe of zucchini, oat and amaranth “bites”
- 3 boiled zucchini
- oat flakes
- 2 eggs
- 1 trickle of olive oil
I am not telling you the quantities as I used what I had on the fridge an then I added the oat flakes to mix it and get the right texture.
The elaboration is quite simple, we put all the ingredients on a bowl and mix it until we have a mixture dense enough. With a spoon we put portions of the mixture and place it on an oven tray with some baking paper on it and bake it for about 10-15 minutes a 200ºC.
