A couple of weeks ago, it was Sant Josep, and in my land it’s a tradition to eat Catalan cream… we’d prepared it our own way….
Recipe of catalan cream with vegetable milk
- 500g of oat milk
- 110g of dextrose or brown sugar
- 4 egg yolks
- 45g of cornstarch
- the skin of a lemon
- 1 cinnamon stick
We place the butterfly whisk on the Thermomix and put all the ingredients on cup, except the lemon skin. We program 15 seconds at speed 3 1/2.
Then we add the lemon skin and program 11 minutes at 90ºC and speed 2. Once it has ended we program 2 more minutes at the same speed but with no temperature.
We place the cream on bowls and let it cool for a while before placing it on the fridge, for at least two hours.
You can serve it with caramelized sugar on top or with cinnamon, as you like the most!!
